La Chapina Restaurant and Panaderia Quetzal
Did you know that a slice of Guatemalan culture exists right here in Evans?
Evans is home to the family-owned and operated businesses of Panaderia Quetzal and La Chapina Family Restaurant. Both businesses are owned by the same family, which includes parents Armando Chanchavac and Ana Pastor, and their grown children, Evelin Chanchavac-Pastor, Felix Chanchavac-Pastor and Daysie Chanchavac-Pastor.
In 2017, the family opened Panaderia Quetzal, which started as a small bakery, making traditional Guatemalan breads and sweets such as Pan Francés, pirujo, pan galleta and more. They soon expanded the store to carry Guatemalan and Central American spices, foods, snacks, drinks and more. Today, you can find a wide variety of products including homemade frozen treats, hard-to-find foods and ingredients, and unique beverages. The family also began cooking meals in the small shop, and their reputation quickly grew along the front range. The two tables inside the store were often occupied, as visitors came to get a taste of Guatemala.
In December 2025, the family expanded their business and opened a full-service restaurant, La Chapina, just two doors down from Panaderia Quetzal. The inside is of La Chapina is spacious, colorful and welcoming, and the menu offers many traditional as well as unique plates from Guatemala.
When asked about the recipes used in the restaurant, Armando states that the recipes are from him and his wife’s families, as well as family recipes introduced by other employees. Some of their menu items (pictured) include tamales, caldo de gallina asado, pupusas, and their signature plate, platillo la Chapina.
Evelin Chanchavac-Pastor would like the public to know that visitors are welcome. “We want people to know that they can come and try and experience Guatemalan culture and cuisine.” She hopes that their restaurant and bakery can be a welcoming place and a place to try new foods and drinks.
